食譜: Apfelkuchen蘋果蛋糕

經過四次試驗,終於找到一個還算不錯的食譜,基本上還是跟外面賣的不一樣,我已經開始懷疑外面賣的到底是不是叫做Apfelkuchen,不過先把這個po上來跟大家分享一下.

這個食譜是在網路上找到的,不過原本的食譜是棗子蛋糕,而我用蘋果代替,前天又做了一次改用西洋梨,都一樣好吃唷!

Apfelkuchen蘋果蛋糕

Main ingredients
1/4 lb butter (=0.5cup = 1 stick ~ 100g+1Tbsp),室溫
1 package of vanilla sugar + enough white sugar to get a total of 1/3 cup sugar
(原食譜用1/3 cup sugar + 1/2 tsp vanilla)
1 egg
1 Tbsp lemon juice (原食譜用1 Tbsp sour cream)
1 pinch of salt (if used unsalted butter)
1 tsp lemon rind
1 3/4 cup flour
1 tsp baking powder
2 apples 去皮去核切1cm片(原食譜用2 cups plums)

Topping
6 Tbsp butter
3/4 cup flour
1/3 cup brown + white sugar (原食譜只用白糖)
1/2 tsp cinnamon powder

1) Cream butter, add sugar, vanilla, egg, lemon peel, lemon juice (or sour cream), and salt.
2) Mix flour and baking powder in a bowl. Then, add to the mixture in 3 batches. The mixture will become a sticky dough. If you use less butter, the mixture may be loose, which is okay, too.
3) Spread the dough over a paking pan. Push the dough onto the base as well as against the sides of the pan.
4) Liberally spread sliced apple (or other fruit) over the dough.
5) Preheat oven to 190C (~375F). Make the topping at the same time. Cream butter and sugar.
6) Add flour and cinnamon. Mix well into loose crumbs.
7) Sprinkle the topping over the apples. Bake in the middle rack for 30~45 minutes. 我烤了30分鐘crust邊緣的顏色就很深了,所以沒有等到45分鐘就拿出來了.

網路上也有人說上面topping改用sugar + cinnamon就可以,沒有試過,不過想必比較不肥:P 總之,enjoy!
